In the mountain valleys of "Sadecczyzna" in the south-east Poland bees collect honeydew from coniferous trees. What characterizes this region is its specific mictroclimate due to clean, unpolluted fir and spruce forests. The honey obtained under these conditions has special aroma and flavour. Many apiaries located in this area, near the forests, collect pure honeydew. Local beekeepers have the knowledge on how to obtain this regional honey in a way that ensures its high quality.
Honeydew honey can be grayish-green, brown or even black, depending on the species of tree from which honeydew is obtained. It crystalises quite slowly, taking a lumpy form.
